Joy laughs Well, did you catch my mistake? I was so excited to be done organizing my assembly line that I didn't distribute the onions or I know I know the chicken. Ah, okay, but that's okay. I'll just put the onions and the chicken in the center of the assembly area and then as I go, I'll add it to the packages. I just have to make sure I don't get too excited and use it up before I get to use up the onions use up the chickens before I get to the last recipe. Alright, let's go package our chicken meals.
Chickens stuffed with spinach, fetta and pine nuts. This is the new recipe for me. Basically we mix spinach, feta cheese and pine nuts together, along with some time lemon juice and garlic. Then we make a little hole in the raw chicken and stuff the mixture in. The fresh spinach has already been cooked You can see I'm dividing the Spanish mixture into four little piles on the dish. I'm supposed to cut a little pocket in the thickest part of the rod chicken breast.
Making the pocket isn't easy with this slimy chicken. The pieces are so thin already. pockets seem too small to hold the Spanish mixture. Maybe I'll try folding the chicken and half around the Spanish mixture that might just work My box of toothpicks is missing. My daughter's must have taken it to do their nails. This chicken breasts too small and fat to fold.
I'll try flattening it with a rolling pin. See how the paper recipe gets spilled on the chicken would stay folded over the spinach mixture easier if I had toothpicks to hold the chicken together. There just seems to be too much spinach mixture to fit in the folded chicken breasts. I will go brown both sides on the stove. I'm not cooking them all the way through, just giving the chicken a bit of color and I'll freeze it. The chicken is brown a bit but the Spanish mixture doesn't stay in very well.
