In this section, we explore moving beyond draconian cellar practices that seek to eradicate all microbial presence. These practices are not only ineffective but open the door to opportunistic organisms that normally are kept at bay by beneficial competing organisms of which we have only recently become aware through the replacement of agar plating with far more sensitive PCR methodology. In this section, we explore how a complex microbiome in the cellar might be managed similarly to Integrated Pest Management which is today accepted good practice in the vineyard. Finally, we will consider the application of the entire course to the making of sulfite-free wines of profundity and longevity.
