Your dough has now been resting for 30 minutes and we are ready to do the first stretch unfold. The purpose of these stretch and fold is to build tension and to build structure in your dough. As you can see, as I'm folding this door, the door gets a lot more tension. Our door has to rest for another 30 minutes before we are ready to the second fold.
