Basically like what we did when we were pre shaping and keep on doing this to build tension.
And when you feel it's getting tight, turn it around and then you do a tension pool. Basically you pool the dough to watch you to tighten up the dough. But be careful you don't rip the surface and then you take your dome and place it upside down in your basket. And now let's shape the second Plouffe spread it out a little bit and then you start folding it into the middle and turn it at the same time. And you just keep on going until the dog feels nice and tight. And then you turn it around and you do the tension pool on second.
But this is where you need to be a little bit careful that you don't rip the surface of the dough because if you rip the surface of the dough your dough will stick to the panel. to him and then you put it in your peloton with the same side up.
